Valentine Pancakes #2
Happy Valentines Day everyone! I hope you are all having a lovely day eating sweets and spending time with your loved ones! As promised, i have ANOTHER valentine pancake post! This time i used my own recipe, which is all healthy, AND they are way more festive!
Okay, just looking at these photos gets me a little more excited than i should be. These pancakes were not only so fun to make, but they tasted AMAZING and they are 100% clean! I got up at 9:30am to make these for my mother and I, and boy did it take me a while. But that is because I'm a perfectionist, AND i made the smoothies which took some time as well. I'm sure if you try making them they won't take as long because you won't have to perfect every single detail right down to the toppings (unless you are like me) but in that case, they hopefully won't take too long! (The whole process took me a little over an hour)
Okay, so what you'll need is oats, oat flour, cacao, Greek yogurt, cinnamon, honey, vanilla extract and red food colouring.
1. In a large mixing bowl, pour 2 cups of dry oats, and 1 and 1/2 cups of oat flour.
2. Add in 1 cup of vanilla/original almond milk
3. Add 2 tsp. of vanilla extract, and 2 tsp. of honey
4. Add 3 tsp. of honey
5. Add 3 tsp. of Greek yogurt
6. If your mix is still dry, keep adding almond milk until it's moist and easy to stir
7. For the PINK STRAWBERRY layer, add a few drops of red food colouring and mix it in
8. Cook them on your skillet like regular pancakes
Once those are finished, put them in the oven on low to stay warm while you do the others. For the chocolate layer, simply repeat the process except use chocolate almond milk and cacao powder rather than vanilla almond milk, and red food colouring.
For the toppings, i did a few simple steps.
1. Put 1 tbsp. of all natural peanut butter in the microwave for 15 seconds. Add in cacao sauce, stir it together, and pour it on top.
2. Heat up a chocolate brownie quest bar in the microwave for 20 seconds. Crumble it up and sprinkle it on
3. Add 1 tsp. of honey Greek yogurt
4. Add cut up strawberries
Next would be the chocolate strawberry vegan smoothies!
1. Remember, whenever you make vegan nana icecream or smoothies, always freeze your fruit the night before, or a minimum of 4-5 hours before.
2. For the strawberry layer, add frozen banana and strawberries, even raspberries too if you'd like, and a tiny bit of vanilla almond milk into your blender. Mix until thick and creamy.
3. For the chocolate layer, simply add frozen banana into your blender along with peanut butter and cacao powder.
Voila. There you have healthy vegan smoothies to go along with your delicious strawberry chocolate oat pancakes.
Personally, I think these are probably the best pancakes i have ever made, not to mention the prettiest. The meal appeal was just superb on this one and i couldn't stop taking pictures of them!

Valentines Day Pancakes #1
Okay, so clearly I'm just in the valentines spirit. I actually made these pancakes for my mothers 50th birthday on Monday (wow) but i left my camera cable at home so i couldn't upload them. I am home now (clearly) so i present to you, these valentine/birthday pancakes.
Since i made these for my mom, i didn't make my usual healthy or vegan pancakes because well... they weren't for me, and my mother does not care if i use a buttermilk pancake package. But i thought since they were so pretty that I'd post them for you all to see.
The recipe isn't that hard - it's just a straight forward buttermilk pancake mix recipe. Oh, but one other thing: they're heart shaped.
But if you want to know, here's how i made them:
1. One cup of buttermilk pancake mix
2. 1 egg
3. 1 cup of milk
4. Mix it all together
5. Grease your skillet with coconut oil
6. Cook them as you would regular pancakes
Unless however, you as well have a mini heart shaped skillet. In that case, cook them in there. (I'm honestly not even sure where to get one, my mom got it last year. It's very little and it's literally just a mini skillet in a heart shape)
For the toppings, i mixed honey Greek yogurt with 1 drop of red food colouring to create a cute light pink colour. Then i cut strawberries into (attempted) little heart shapes, and also added raspberries on top along with maple syrup.

Triple Layer Valentines Day Smoothie
Valentines
day is in two days, so you know what that means? FESTIVE LOVE FOOD!
There's no lovelier holiday than the holiday of love. Valentines day is
all about spending time with the ones you love. Oh and it's about
eating; lots and lots of eating.
Whether you are single or taken this valentines day, you are going to want something special to have, ranging from something pink to something chocolatey. The first tasty treat i have lined up for you guys is a triple layer smoothie, perfect for this holiday.
All you'll need to make this is frozen fruit, Greek yogurt, peanut butter, vanilla extract, and a magic bullet or food processor. Cut up strawberries, bananas, and raspberries and freeze them for a minimum of 4-5 hours prior to making your smoothie.
1. Lets begin with the first layer - vanilla peanut butter. All you need to do for this layer is add 1 cut up frozen banana, 1 tbsp. of peanut butter, and 1 tsp. of vanilla extract. Stick them in the blender and mix it until it's thick and creamy. Pour it in a jar and place it in the freezer until you're finished all your layers.
2. For layer two, all you'll need is 2 strawberries, and 1 frozen banana and 1 tsp. of Greek yogurt, because you want this layer to be lighter pink than the top one. Stick them in your blender and repeat the process as the first layer.
3. For your final and top layer, you'll need 5-6 strawberries, 4 raspberries, and 1 frozen banana and 1 tsp. of Greek yogurt. Blend them together.
Take all the layers out in front of you. First pour in your peanut butter layer, then your light strawberry layer, and finally, your dark strawberry and raspberry layer. This smoothie tastes just as good as it looked, and it's perfect to make for you and your love one to enjoy in the afternoon together. Have a good valentines day everyone!

Oatmeal and Breakfast
Breakfast has been proven to boost metabolisms and helps people lose weight. It is unhealthy to skip breakfast in the morning. Even if you "don't have enough time", or claim to "not be hungry when you wake up" you should still eat. Whether it be oatmeal, or overnight oats because they are quicker, you can find a variety of healthy and filling breakfast foods that are perfect for you!
The reason i love oatmeal for breakfast is because it's moist, warm deliciousness. The soft oats mixed with brown sugar is so delightful, and when i top it with cashews, fruit and peanut butter, it is just the most perfect combo.
I highly recommend that if you don't already, that you start having oatmeal for breakfast. And not just the tiny little 1 minute packet you get from the store, but 2/3 of oats, and top it with whatever you want! I promise you it will not disappoint, and you will love it!
To make my oats, i simply pour 2/3 cups of dry oats into a bowl. I add 1 tsp. of brown sugar and a few almonds and/or cashews. I boil water, pour it in, and mix it up until i get the texture i like (not too watery, not to stuck together). Then i add peanut butter and fresh fruit! It's that simple, and it's a perfect start to my day!

Vegan French Toast
Everybody loves a good batch of French Toast in the mornings, especially me. So i created this recipe so that i could still enjoy one of my favourite breakfast foods, AND not harm any animals in the process. Vegan food is the way to go for everything. I eat vegan 95% of the time, and i strongly believe this lifestyle is healthier for your body, and better for animals (obviously)
Usually i post most recipes here on my blog, but i do have an E-book as well that contains 27 healthy recipes, some that are NOT on my blog or Instagram, along with personal workouts, foods i eat, meal plans, vegetarian meal ideas, and behind the scene photos.

Vanilla Oat Pancakes
These pancakes are fluffy, delicious, and they are 100% clean including the chocolatey goodness oozing over the top. All you'll need to make them are coconut oil, oat flour, water, Greek yogurt, cinnamon, vanilla extract, peanut butter, and cacao. Oh, and strawberries for the topping.
1.
Start off by turning your skillet or stove to 350
degrees
2.
Grease your pan with coconut oil
3.
In a large mixing bowl, pour 1 and ½ cups of oat
flour
4.
Have 1 cup of water, but pour it in eventually
as you add your ingredients. You may not need all of it, or you may need more
of it.
5.
In your mixing bowl, add in 2 tsp. of Greek
yogurt
6.
Add in 1 tsp. of cinnamon
7.
Add in 2 tsp. of vanilla extract
8.
Mix it all together till you have a mixture that
isn’t too thick, but isn’t too runny
9.
Pour it on your skillet as you would make regular
pancakes
10.
Flip them when they start to brown
This should make around 8 pancakes. I topped mine with peanut butter and cacao
sauce heated up in the microwave for 20 seconds, and strawberries. Enjoy!
